BBQ Roasted Pork Belly
Ingredients:
2-3kg Gloucestershire Old Spot Pork Belly Joint (Ask for it scored)
For the Rub:
3 tbsp Salt
3 tbsp Paprika
5 tbp Garlic Powder
2 tsp Mustard Powder
2 tsp Black Pepper
Alternatively we stock a wide range of Tubby Toms meat rubs and wet marinades, available in our farmshop.
Preparation
Place the Pork Belly joint skin side down and cover in the rub or marinade of your choice. Careful not to get any on the skin.
Turn over and rub the skin with a generous amount of salt, this will form a good crackling.
Cooking
Pre-heat your BBQ to an approximate temperature of 250 degrees.
Place the pork over indirect heat and allow it to roast for approx. half an hour.
Allow the temperature to drop to around 180 degrees and continue to roast for a further half an hour or until the center reaches a temperature of 70 degrees.
Remove the Pork Belly and allow to rest for 10 minutes before cutting into it.
